Nonna’s Almond Biscuits

Serves 20



4 eggs

2 cups sugar

1 cup almond oil

1 tsp pure vanilla extract

1 cup fresh orange juice, strained

2 dessert spoons Grand Marnier

3 cups almond meal created from Mandolé Orchard Natural Almonds

3 cups self-raising flour

3 cups icing sugar, sieved



  1. Beat eggs and sugar together until sugar is dissolved. Then add oil, vanilla extract, juice and Grand Marnier.

  2. Add almond meal and flour. The mixture will look wet, you may need to add more meal/flour until firm.

  3. With a teaspoon of mixture, drop into plate filled with icing sugar. Flip to cover both sides and place on baking tray lined with baking paper.

  4. Cook at 180°C for 12 minutes or until golden in colour.

    You can also freeze any extras - they will defrost in no time!
