Ingredients
350g ripe bananas (approximately 4 bananas cut into pieces)
130g unsalted butter (softened)
150g caster sugar
2 eggs
220g plain flour
2 tsp baking powder
1 pinch salt
1 tsp bicarbonate of soda
100ml Mandolé Orchard Original Almond Milk
2 tsp natural vanilla extract
Method
1. Pre-heat oven to 180 °C. Grease a loaf tin (25 x 10 x 11cm) and set aside.
2. Place ripe bananas into a food processor and blend for 5 seconds on high speed.
3. Add softened unsalted butter and caster sugar and blend for 20 seconds on medium speed. Scrape sides of food processor bowl with spatula.
4. Add eggs and mix for 10 seconds on medium speed then add flour, baking powder, salt, bicarbonate of soda, Mandolé Orchard Original Almond Milk and vanilla extract and combine.
5. Pour into loaf tin and bake for 50-60 minutes or until a wooden skewer inserted into the center of the cake comes out clean.
6. Slice and serve.
