Ingredients
Filling
5 peeled apples, chopped
¼ cup sugar
5 cloves
2 slices lemon peel
¼ cup water (Stew apples whilst making pastry otherwise as an alternative, tinned apples can be used)
Pastry
½ cup almond meal created from Mandolé Orchard Natural Almonds
125g melted butter
1 egg
1 tsp vanilla
1 cup self-raising flour
½ cup raw sugar
Method

Set oven to 180°C.

For the filling, add apples, sugar, cloves, lemon peel and water to a saucepan. Bring to the boil then simmer until apples are soft.

Prepare a pie dish by oiling with butter and sprinkling with almond meal.

In a bowl, stir cooled melted butter, egg and vanilla first, then add self-raising flour, almond meal and sugar till combined.

Press about ¾ of the mixture into the prepared dish. Top with hot stewed apples then drop dobs of extra pastry on top to cover apples. Sprinkle with some extra sugar.

Bake in a moderate oven for 55 minutes.
