Almond Milk French Toast

Serves 2



2 eggs

125ml Mandolé Orchard Unsweetened or Original Almond Milk

1 tsp vanilla paste

½ tsp lemon zest

1 tsp maple syrup

4 thick slices of sourdough bread 

Knob of coconut oil

Maple syrup or honey, mixed berries or fresh fruit and yoghurt or ricotta to serve



  1. Break the eggs into a bowl and whisk in the almond milk, vanilla, lemon zest and maple syrup. Pour the mixture into a deep baking tray and place the bread into the mixture. Leave to soak for approximately 1 minute.

  2. Place a pan on medium heat and add a good knob of coconut oil. Turn the bread over in the baking tray and leave for another minute to soak up the mixture. Carefully lower into the pan and cook for 2–3 minutes on each side until golden and crisp, taking care when you flip it.

  3. Place two slices on each plate, dot with yoghurt or ricotta and the mixed berries or fresh fruit. Top with maple syrup or honey if you like things a little sweeter.
